Ingredients

  • 1 cup chicken broth
  • 1/2 cup ketchup
  • 1/4 cup dark molasses
  • One small onion
  • 1 tbsp brown mustard
  • 2 tbsp Worcestershire sauce
  • 2 tbsp hot sauce
  • 2 tbsp cider vinegar
  • 2 tbsp spice rub
  • 1 tsp liquid smoke

Instructions

Start by combining all ingredients in a small pan over medium heat. Keep the pan on the stove and whisk everything together until it reaches a glaze consistency. Usually, this takes about 15 minutes. Also, the batch will be reduced by about a third.

  • 1/4 cup water
  • 4tbsp dry ground mustard
  • 3 tbsp white vinegar
  • 1/2 tsp instant flour
  • 1/4 tsp + 1/8 tsp kosher salt

  • Pinch paprika
  • Pinch garlic powder

Instructions

Ingredients

  • One onion (medium size)
  • One clove garlic
  • 2 tbsp olive oil
  • One 28-oz can tomato purée 
  • 1 tbsp tomato paste
  • 1/4 cup cider vinegar
  • 1/2 cup packed dark brown sugar
  • 1/2 tsp kosher salt
  • 1/2 tsp ground mustard
  • 1/8 tsp cayenne pepper
  • 1/8 tsp allspice
  • 1/8 tsp ground cloves

Instructions

Firstly, heat the olive oil in a medium-sized saucepan. It’s best to set the stove to medium heat until the oil starts shimmering.

Then, add the chopped onions. Make sure to stir occasionally until the onions soften, but don’t let them turn brown. Usually, this step takes about 5-8 minutes. 

Add the garlic and stir for another 30 seconds to get some fragrance. 

Next, add the remaining ingredients and stir until everything combines. Bring the mixture to a boil, lower the heat and let the ketchup simmer for another 45-60 minutes. Just be sure to stir occasionally, so the sauce doesn’t stick to the pan.

There are a few more steps until your first batch of homemade ketchup is finished. It’s time to bring out the blender. Pour everything from the saucepan into the machine and purée until the mixture is entirely smooth.

The finishing touches require working on the mesh with a spatula and a strainer. And, once you do that, you’re almost finished. You can add oregano or some other seasoning, pour the sauce in jars, and seal if you wish. 

You can keep it refrigerated for up to a month.

  • One chile, either Ancho or Pasilla 
  • One Cascabel or Arbol
  • One yellow onion
  • Two cloves garlic
  • 1 1/2 tsp whole cumin seed
  • 2 tbsp butter
  • 1 tsp coriander seed
  • 1/2 tsp dried oregano
  • One clove
  • One star anise
  • 3 tbsp tomato paste
  • 2 tsp soy sauce
  • 1 tsp sugar
  • One anchovy filet
  • 1/2 tsp Marmite
  • 1 1/2 lbs ground chuck (preferably 80/20)
  • 2 tbsp masa harina
  • 1-quart chicken stock
  • 1 tbsp bourbon
  • 1 tbsp hot sauce
  • Kosher salt

Instructions

The first thing you need to do is prepare the chiles. Boil them in a microwave for about 10 minutes, then use a blender to turn the chiles into a paste. 

Next, melt the butter, cook the onions and add the spices. Once you can smell the aroma, add the tomato paste, anchovy, soy sauce, and sugar. Cook the mixture for about two minutes or until the paste starts to stick.

Adding chicken broth and ground beef is the next step. Firstly, add 2 cups of chicken broth, then the beef, and finish with the remaining broth. Cook the sauce on medium heat for about 75 minutes while stirring occasionally. The result should be thick and dense.

The last step is to add masa mixture, bourbon, and chili to the sauce. Once again, let everything simmer for about 2 minutes, and the chili will be ready to taste!
